Klaas Stoffberg & Charl Coetzee's newest red wine release from the sought-after Babylonstoren Farm in Simonsberg. This red is made using exclusively Cabernet Sauvignon grapes harvested on the foothills of Simonsberg Mountain, a region nestled between Paarl, Franschhoek and Stellenbosch in the Western Cape. The juice is matured in French oak after fermentation with 40% going into new oak and 60% going into second-fill oak for 18 months. Big fruits like blackcurrant, black cherry and cassis dominate over velvet, chocolatey tannins with a hint of sweet tobacco and cedarwood. Marvellous now but will age for 10 years. Food pairing: Oxtail stew, fillet of beef, well-seasoned peppery lamb, burger
with tangy blue cheese, buttery and garlicky Portobello mushrooms. Cheese pairing: Gorgonzola, cheesy polenta, aged cheddar or gouda.
