    In the scotch whisky industry a barrel usually refers to an American ex-bourbon cask. Barrels are dismantled into their component staves in the USA and shipped to Scotland, where they are reassembled by master coopers. When the barrels are reassembled in Scotland additional staves are often added to create a cask with a higher volume. 

    What makes a great whisky even greater? The cask. Whisky spends years maturing in oak barrels, absorbing the character of the wood and what once lived in it. Cask finishing is the art of taking an already-mature spirit and giving it a second life - maturing it further in a different type of barrel (like a Sherry, Rum, or Tequila cask). This “secondary maturation” unlocks depth, complexity and rare flavour profiles. It’s a method favoured by innovators, artisans, and flavour explorers.

      TASTING PROCESS

      1. Private tasting and tutoring, including a 2-course meal
      2. Only available for groups of 4 at a time
      3. Full pre-payment before confirmation of booking - dates and times
      4. Suitable dates will be provided for the tasting, which will take 2 hours maximum
      5. All pouring per individual glass 25ml
