In 1693, the first vineyards were planted at the top of Bloemkoolfontein farm, today known as Fairview. Over the years, the estate has reinvested its efforts back into the land, replanting vines that suit the soils and expanding our vinicultural horizons every step of the way.
Handpicked early in the morning, the grapes were delivered by cold truck from Piekenierskloof to the FV cellar. 20% whole bunches were placed at the bottom of the foudre to elevate the fruit expression, with stems included to add aromatic interest to the nose and a bit of grip to the palate. The rest of the berries were hand-sorted on top. The wine was left to start fermentation spontaneously. Extraction using a combination of punch-downs and pump-overs, respecting the balance of fruit and tannins. Basket-pressed to barrels, after 12 months, the best barrels were selected for the purest expression of this beautiful vineyard site and cultivar.
