A second berry selection was carried out in the cellar before the must was fermented with pure yeasts. During the five-day mash fermentation, the juice was pumped over the skins several times a day and punched down by hand. Once fermentation was complete, the wine was separated from the yeast and transferred to a resting tank. This was followed by malolactic fermentation and a short resting phase before the wine matured in French oak barrels (225 liters, 25% of which were new) for 12 to 14 months.\u003c\/p\u003e\n\u003cp\u003eThe Raka Malbec is an ideal accompaniment to grilled beef, spicy braised dishes or mature hard cheese.
